James Beard Foundation Pop-Up Dinner

On Mar. 26, Seattle will welcome the James Beard Foundation’s Taste America® presented by Capital One for a Pop-Up Dinner as part of the larger National tour, which brings delicious food and thought-provoking conversation surrounding the non-profit’s mission of cultivating a better food world for all.

Spotlighting issues within the Foundation’s Good Food for Good™ platform, including food waste reduction, sustainability, inclusivity and chef advocacy, the seventh annual cross-country food series — visiting 20 different U.S. cities — will highlight the organization’s mission-forward impact programs and initiatives, while dishing out tasty bites to the food-loving community of Seattle.

Taste America’s Seattle Pop-Up Dinner on Mar. 26 at Aerlume will feature a menu crafted by Taste America Local All-Star Jason Wilson, the James Beard Award-winning culinary director at Fire & Vine Hospitality (including El Gaucho, AQUA By El Gaucho, Miller’s Guild, The Lakehouse, Civility & Unrest, Eritage Resort and Aerlume), plus host chef Maggie Trujillo of Aerlume and a Visiting All-Star chef to be announced soon.

Since bursting onto the scene with his first restaurant, Crush, Wilson has become one of Seattle’s most celebrated chefs. As culinary director for Fire & Vine Hospitality, Wilson drives creative development and spearheads future projects at all of Fire & Vine’s restaurant properties, while continuing his position as chef-owner of Miller’s Guild, The Lakehouse and Civility & Unrest.

The Pop-Up Dinner prepared by Wilson, Trujillo and the Visiting All-Star chef will highlight the diverse flavors and backgrounds that contribute to Pacific Northwest cuisine, and celebrate sustainability with locally sourced ingredients.

This year marks the fourth time that the James Beard Foundation’s Taste America has visited Seattle. Expanding for the first time to span nearly a full year, Taste America 2019-20 will also be traveling to: Atlanta; Boston; Charleston, SC; Chicago; Dallas; Denver; Houston; Kansas City, MO; Los Angeles; Louisville, KY; Miami; Minneapolis/St. Paul; Nashville; New Orleans; Philadelphia; Phoenix; Portland, OR; San Francisco; Washington, D.C.
