Join us for an unforgettable winemaker’s dinner, hosted by Della Terra and Ashton Troy Wines!

Our multi-course chef’s tasting dinners feature the finest and freshest ingredients of the moment from the local harvest. Savor the local flavors with carefully created dishes, in a hyper-seasonal and local tasting menu created by Della Terra Chef Cody Castiglia.
The five course meal will be paired with Ashton Troy wines, selected and served by the winemaker himself, Kit Singh.

Meaning “from the earth”, Della Terra ventures include catering, cooking classes, and events, all staying true to the philosophy of using the best ingredients available from the local harvest. This allows us to be creative with the vast bounty we have available in the Northwest, resulting in better tasting and better-for-you food that benefits the environment and the local economy. We source the majority of our ingredients from within the community from local farms and producers, many of which are located just down the road in Snohomish and Woodinville.

About The Winemaker:
The Lauren Ashton Cellars story goes years back when Kit Singh, a dentist by profession, (still operating Eastside Dental Cosmetic & Family Dentistry today) explored Europe’s most known wine regions in France as well as spending time in Napa and Sonoma where he truly discovered the enjoyment of wine.

In 2009, Kit channeled his genius of chemistry and deep-rooted scientific background with his appreciation of wine and created his own brand called Lauren Ashton Cellars. Lauren Ashton Cellars was inspired by the winemaker’s two children, Ashley Lauren and Ashton Troy. Keeping his focus on family, Kit wanted to reflect on his wife Riinu’s heritage and culture by branding his labels with photographs showcasing the beautiful small country in Europe, Estonia.

Utilizing his undergraduate work in Chemistry and deep-rooted science background, Kit oversees every aspect of winemaking at Lauren Ashton Cellars. He is a hands-on operator, choosing the grapes and barrels while continuously and obsessively monitoring the process of each wine barrel progression. “I look at where the grapes are coming from and want to express the grapes themselves with little intervention. I believe you have to start with great grapes, you have to taste the grapes often and guide the grapes through the vinification process, stated Kit.

Kit is a perfectionist who takes great pride in the production of every bottle of his hand-crafted wines and is a notable winemaker to watch in Washington winemaking. The first release from Lauren Ashton Cellars boasted a 95-Point rating from Robert Parker’s Wine Advocate on the 2009 Proprietor’s Cuvee, and a 95-Point rating from Wine Enthusiast on the 2009 Cuvee Arlette, making it a Top 100 Cellar selection.

Since that time, Lauren Ashton Cellars has consistently receive 90+ Point scores on each and every wine released. Today, Kit serves as the Vice President of the Woodinville Wine Country Association, working to market Woodinville as a world-class tourist destination. Additionally, Kit is heavily involved in welcoming visitors to our community through his work with Visit Seattle and the Washington Wine Commission.

About Ashton Troy Wines
You know you are making great strides in the wine industry when you branch out into a second label. That is exactly what Lauren Ashton Cellars, has done with the launch of Ashton Troy Wines, released in March 2018.
“This whole story started with my son Ashton (age 8) wanting his own label! We wanted it to be recognizable with the Lauren Ashton Cellars brand as well. We used Ashton’s first and middle name, then used Troy and a play-on-words to come up with the Trojan horse. Our hope is that the two labels side by side are distinct, but also have the look and feel of the same family of wines.” says winemaker Kit.

“When thinking about the label and the wine itself, I wanted everything to be inspired by Ashton. These wines are playful, full of energy and warmth, all attributes that Ashton embodies. He’s a very thoughtful kid and the wine takes inspiration from him as a child.”, he added.

Kit and Riinu designed Ashton Troy Wines to bring their wines to local, regional and national restaurants and help find a new fan base to learn to know and love Lauren Ashton Cellars. Ashton Troy Wines are designed exclusively for the restaurant market and were designed to be bold and stand up to restaurant flavors. The robust reds pair well with meats or red sauces. The wines have brilliant aromatics for the discerning restauranteur.
